Hearty Chickpea Stew - Winter 2020
Nothing gives us winter feels more than a hearty stew, lighting some candles, and snuggling with our loved ones. We hope you can enjoy this super easy recipe this holiday season!
We’re not about making a bunch of special trips to the store, here are a couple of notes on cooking with what you have:
If you’re not dairy-free or vegan, you can use chicken broth instead of vegetable broth
We prefer to use avocado or coconut oil, but any butter or oil that you generally use for cooking will work!
We listed a few ideas for toppings or sides to go with this stew! You can adjust to your dietary needs, we prefer vegan sour cream and garlic bread!
Ingredients /
1 can of chickpeas/garbanzo beans
2-3 stalks of celery
2-3 medium carrots
1 whole sweet yellow onion
3 cloves of garlic
1 can of diced tomatoes
4 tablespoons of coconut butter
1/2 cup of vegetable broth
Avocado oil (or oil of choice)
Seasonings /
Salt and Pepper
Allspice Powder
Umami Powder from Trader Joes
Italian Herb Seasoning
TOPPINGS /
Sour cream
Cream cheese
Shredded cheese
Croutons
OPTIONAL SIDEs /
Rice
Quinoa
Garlic bread
Directions /
1. Dice the celery, carrot, onion, and garlic and place into a warm pan with oil at medium heat.
2. Once the veggies have warmed up add the can of chickpeas and mix.
3. Add the seasonings to the veggies and beans and stir to incorporate.
4. Cook at a medium to medium-low heat for 5 minutes.
5. Add the can of tomatoes and butter to the pan and stir.
6. Add 1/4 cup of vegetable broth and bring to simmer. You will want the veggies to be somewhat covered, but not submerged in broth.
7. Now you will turn the heat to medium-low and let the stew simmer for 30-60 minutes until the liquid is thicker - stirring every 15 minutes or so.
8. Add any additional toppings and enjoy! For a heartier meal, pair with rice, quinoa, or garlic bread.
